Easy to Make Mother’s Day Cakes

Moms are like most people. They get pleasure from a treat now and then. You can put together one of these frugal and easy to make Mother’s Day cakes for Mom and everyone else in the family to enjoy.  Choose one of these easy to make Mother’s Day cakes if you want to impress Mom this year. Both are easy to make but taste wonderful. Either will be a treat Mom will love.

This cake doesn’t even require baking. How easy is that? In fact, it’s so easy even the children can make it.

Ingredients:

* 1 pre-made pound cake (10 ¾ ounces)
* 1 box (3 1/8 ounces) instant pudding in Mom’s favorite flavor
* 1 cup whipped topping
* Fruit of choice (bananas and strawberries are good choices)
* Chilled chocolate syrup

Instructions:

Begin by cutting the pound cake into several horizontal slices of about an inch thick each. Make the pudding according to the directions on the box and then mix in the whipped topping. Chop up the fruit in slices.

Place a layer of cake in the bottom of a glass loaf pan. Put a layer of fruit over the cake and then spoon some pudding over the fruit. Continue layering the cake, fruit and pudding mixture until the final layer of cake is placed. Finish by spreading pudding over the top of the cake.

Cover the cake loosely and then place it in the refrigerator for several hours. Decorate the cake with “Happy Mother’s Day” written in frosting and add some extra sliced strawberries or candy on top. When you serve the cake, squeeze chilled chocolate syrup over the cake. Enjoy!

This next cake is called a “Granny cake” but Mom will love it, too!

Ingredients:

* 3 cups all-purpose flour
* 2 cups granulated sugar
* 1 teaspoon baking soda
* 1 teaspoon ground nutmeg
* ½ teaspoon salt
* ½ teaspoon ground gloves
* ¾ cup softened butter
* 2 cups mashed ripe bananas (about 6)
* 1 8-ounce can crushed pineapple (undrained)
* 3 eggs
* 2 teaspoons vanilla
* 1 cup finely chopped pecans
* Powdered sugar (optional)

Instructions:

Begin by greasing and flouring a 10-inch fluted tube pan and set it aside. Stir together the flour, sugar, baking soda, nutmeg, salt and cloves in a medium mixing bowl. Set this aside also.

In a large mixing bowl, beat the butter for 30 seconds with an electric mixer set on medium. Add the bananas, pineapple, eggs and vanilla and beat until well combined. Add the flour mixture and beat on low speed until it’s combined. Then beat the mixture on medium speed for 1 minute. Finish by folding in the chopped pecans. Spread in the prepared pan.

Bake the cake for 70 to 75 minutes in an oven set to 325 degrees Fahrenheit. The cake is finished baking when a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool completely on a wire rack for 10 minutes before you remove it from the pan. Cool thoroughly and then sift powdered sugar over the cake to serve, if desired.

Pizza Dough Recipe – Make Your Own Pizza and Pizza Dough

We buy pizza crusts at the supermarket and add the sauce and toppings, or make it simple with the take-out. The American style version of pizza is a heavy affair, loaded up with layer after layer of meats, veggies and cheese, sometimes a couple of inches thick! Not a dieter’s dream, except for perhaps the taste! In any case, pizza is a dish the whole family can love and which we enjoy often.

Some adventurous cooks rely on home made pizza dough recipes, but many of us shy away from this economical option as a foreign cooking skill we can’t master and should leave to the professionals. Authentic pizza dough recipes are easy, quick and inexpensive to prepare. Try the pizza dough recipes given below, one generic, with a number of variations, and I’ll bet you’ll never use the commercially available crusts again.

First, a little background on the differences between the authentic Italian pizza and its American style counterpart. The Italian pizza is usually sparsely topped, (by American standards), with just a few, choice ingredients, baked quickly, at a high temperature, in a wood fired stove which produces that distinctive, very thin and crusty bread, with a savory flavor which is the standard by which good pizza  dough recipes are judged. Ask any Italian – the bread is the star of the show.

The three most popular pizza in Italy are the Margherita, consisting of a thick tomato paste-sauce spread thinly over the crust and topped with slices of fresh mozzarella. In second place, is the Napoleatana, a Margherita to which is added small amounts of anchovy. Quattro stagioni comes in third, with toppings representing the four seasons, divided in to quarters. Fresh green herbs or veggies decorate the spring quarter, with tomatoes for summer, prosciutto and mushrooms for fall and of course, fresh white mozzarella for the winter season.

To prepare pizza dough recipes in the Italian manner, little equipment is needed. You’ll need a pizza stone, available in some department stores and any specialty kitchenware shop. Choose a size that accommodates your oven space and is large enough to make a family sized pizza – 16” is a good all-purpose size. You’ll also need a pizza peel, a short handled utensil with a wide, stainless ‘paddle’ attached, to afford easy insertion and removal from the oven. The last item you’ll need is a pizza wheel, which makes cutting the pizza into even pieces a breeze.

One last remark on producing that authentic Italian taste and texture to pizza dough recipes: using buttermilk results in the prized thin, crusty and savory flavor. You may substitute milk or water, but then you’ll need to add ½ teaspoon salt to properly balance the flavor.

To make enough dough for a 16-inch pizza:

1 envelope active dry yeast
½ cup buttermilk, room temp (You can use milk or water instead.)
1 3/4-2 cups unbleached flour
 
1. Dissolve yeast in warm-hot water, about 115-120 degrees. Stir in buttermilk. Add just enough flour to make a soft dough. Don’t add too much. You want a supple, stretchy dough. Knead, gently, by hand, for 10 minutes.

2. Shape the dough into a ball and place in a lightly oiled bowl about twice the size of the cough ball. Cover with plastic warp and allow to rise in a warm place (the top of the frig is a good spot) until doubled in size, about 45-60 minutes. Punch the dough down, kneading very lightly and reshape into a ball. Let it rise again.

3. When the dough is almost ready, generously sprinkle the pizza stone with cornmeal. This is a secret which pertains to all pizza dough recipes! The corn meal acts like tiny ‘ball bearings’ allowing the pizza dough to smoothly transfer to and from the stone, without sticking, as well as adding savor.

4. Flatten the dough and use a rolling pin to roll out the dough directly on the pizza stone. You can also infuse fresh herbs, such as basil or oregano into the dough before baking. Use a light hand and even strokes with the pin. Apply your toppings to the crust.

5. Preheat the oven to 500 degrees. Conventional pizza dough recipes call for a temperature of 425 degrees. Italians know that attaining that perfect crust requires faster cooking. The flavors and texture of toppings are also enhanced. Instead of cooking for 15-20 minutes, this pizza recipe is ready in just 8-9 minutes!

You can see that these variations on pizza dough recipes are quite easy and will certainly save you money. You’re also rewarded with a superior taste and texture. Embrace the Italian philosophy of ‘less is more’ when it comes to toppings. You’ll be delighted to serve this dish, not often found outside of Italy.

Frugal Living Tips: Homemade Cleaning Solutions

Tile cleaner, counter cleaner, wood cleaner, sink cleaner, and more… most of us have at least one cabinet filled with cleaning supplies that we paid good money for. You can make your own frugal cleaning solutions that work just fine but cost a lot less than commercial cleaning solutions. Homemade cleaning solutions cost about one tenth the price of store bought cleaners, take up less room, and are healthier for you and your family!

These inexpensive, non-toxic items are all you need to keep your home clean and germ-free for a fraction of the cost:

• Baking soda – Cleans and deodorizes without leaving grit behind
• Washing soda
• White distilled vinegar – Mild acid that eats away water deposits and dirt
• Liquid detergent
• Tea tree oil – Great for killing all kinds of mold!
• Clean spray bottles

What Can I Make With These Ingredients?

1. Sink and tub cleaner. Half a cup of baking soda mixed with enough liquid detergent to make a paste is excellent for cleaning your tub. To wipe away stubborn water deposits, pour vinegar on them. If you have some build-up and the deposits don’t loosen immediately, let the vinegar sit for a while and repeat until the deposits loosen and wipe off.

2. Window cleaner. Mix together ½ teaspoon of liquid detergent, 3 tablespoons of vinegar, and 2 cups of water in a spray bottle. Use newspaper instead of a rag to clean with and your windows will come out sparkling and streak-free!

3. Oven cleaner. Unplug your oven and sprinkle a layer of water, then baking soda, then more water on the bottom of the oven. Let it sit overnight. In the morning, use a soapy sponge to wipe clean.

4. All purpose spray cleaner. Mix together a drop of liquid soap, ½ teaspoon of washing soda and 2 cups of hot water in a spray bottle. This solution is great for everyday cleaning of counters, stove tops, microwaves, and more. It will cut grease and leave surfaces shining.

These aren’t the only frugal cleaning solutions you can make with these products. Experiment with your own concoctions and save money while you enjoy a sparkling home!

Do you suffer from arthritis? If so, pain relief is important. Without it, you may be unable to function from day-to-day. Instead of opting for a gym membership to gain treadmill access, walk around your neighborhood or inside a shopping center. Diet. As previously stated, exercise is recommended for arthritis relief. Although this exercise may be painful at first, it will get easier overtime. Movement will reduce joint stiffness. This should not only provide pain relief, but it lessens the risk of additional complications. For example, those with arthritis who seek little or no treatment later find themselves dealing with severe stiffness, the inability to move, and deformities. Combine diet and exercise to lose weight.

Right about now, you may be thinking dieting isn’t free either. In reality it is. You already buy food and drinks. You need these to survive. Carefully choose your foods. Eliminate those with high fats and calories. Weight loss is an easy way to lessen the pain associated with arthritis. The less weight you have pressing on the joints, the less pain you will experience. If you don’t have any weight to lose, good. Still know the importance and many health benefits of healthy eating.

Avoid applying too much pressure to the painful joints. Those suffering from severe arthritis will experience pain no matter what the activity. Others will only experience pain when trigged. For example, those who have pain in their elbows want to limit use. If you need to lift heavy boxes, lift them properly. Yes, it is easier to reach down and grab, but this strains the elbows. Instead, properly squat down and lift with your entire body. Avoiding joint pressure will not eliminate arthritis pain, but it will lessen the severity.

Ask for help. As previously stated, some arthritis sufferers trigger severe pain by trying to complete a task they shouldn’t. If you have severe arthritis in your hands, don’t spend hours trying to open a jar. Not only will you get frustrated with your inability to open the jar, you increase the risk of severe pain. Instead, ask for help.

In conclusion, you do not need to be rich to seek relief from your arthritis caused joint pain. Don’t suffer any longer. Exercise, health healthy, limit strenuous activity, and ask for help. Doing so will lessen the pain you experience, without costing you a penny.
