    Fresh Strawberry Freeze

    1 large egg white
    1/2 cup powdered sugar
    1 pint very ripe strawberries, cleaned and stems removed
    1/2 tsp vanilla

    Beat egg white until frothy then beat in sugar. Add vanilla extract. Add strawberries and beat at high speed until light and fluffy. Pour into two serving glasses and freeze.

    Sticky Chicken

    1 large package chicken drumsticks
    1 large can of pineapple (crushed or chunk)
    1/2 cup brown sugar
    garlic, salt and pepper to taste.

    Saute the chicken until is 3/4 done. Pour the pineapple, juice and all over the chicken and add the brown sugar. stir and let reduce on low heat. When chicken is done serve over rice.

    Frugal Banana Smoothie Drink

    1 banana, cut in half and frozen
    1 T. cocoa powder
    1/4 t. cinnamon
    2 dates, pitted
    splash of vanilla
    3/4 to 1 c. cold water

    Combine in blender or smoothie maker, blend til smoothe.

    Bacon Scalloped Potatoes

    5 strips of bacon
    1 onion, peeled and sliced
    1 T. butter
    4 potatoes, peeled and sliced
    1 can cream of mushroom
    2/3 C. milk
    1/8 t. black pepper

    Cook bacon until crisp. Drain and allow to cool then crumble and set aside. In the same skillet, cook onion in butter until tender. Stir in potatoes, soup, milk and pepper. Bring to a boil, reduce heat, cover and simmer until potatoes are tender, 10-20 minutes. Sprinkle bacon on top before serving.

    Frugal Recipes: Cheesy Pasta Bake

    5 cups pasta, cooked
    29 ounces spaghetti sauce
    1 lb ground turkey, cooked and drained
    1 (4 ounce) can mushrooms
    1/2 cup parmesan cheese, grated
    1 (8 ounce) package mozzarella cheese, shredded

    Mix sauce, meat, parmesan, mushrooms and pasta in a greased or sprayed 9×13 pan. Top with mozzarella and bake at 375 F for 30 minutes.

    Frugal Recipes: Fruity Popsicles

    1 can of fruit (your choice of fruit)
    1 can of frozen lemonade (or fruit punch)

    Puree or mash the fruit in a bowel, using the juice too. Mix the lemonade (or other fruit juice choice) with two cans of water instead of the usual three that the can call for. Mix all ingredients together in a bowl, then pour into popsicle molds. Freeze.

    Popsicle molds can be found at your local Walmart or Dollar Store.

    Frugal Recipes: Hamburger Steak

    3 pounds ground beef
    25 saltine crackers, crushed
    1 cup milk
    1/2 teaspoon black pepper
    1/2 teaspoon salt
    1/2 teaspoon garlic powder
    1/2 teaspoon Italian seasoning
    3 cans condensed cream of mushroom soup
    1 can mushrooms, drained

    Preheat the oven to 350 degrees. In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9×13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil. Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

    These are delicious served with rice, mashed potatoes, or pasta.
