Healthy Food on a Small Food Budget

They say you are what you eat, and that’s pretty much true. If you eat unhealthy foods that are loaded with fat and sugar, you will be unhealthy. If you eat fresh, unprocessed, nutritious foods, you will be healthy. But when you’re on a budget, that notion tends to be passed over in favor of whatever is cheap.

At first glance, eating healthy may seem terribly expensive. Fresh meats can tack a lot onto your grocery bill. And those exotic fruits you’ve always wanted to try just never seem to go on sale. It’s tempting to just grab a week’s supply of those dinners in a box that cost a dollar or two each and be done with it.

But eating healthy on a budget isn’t as impossible as it seems. In fact, if you play your cards right, you can actually eat healthy for less than you would pay to eat a diet full of junk food. Here are some tips.

* Include more beans and pasta in your diet. Dried beans are very inexpensive, and they keep forever. The same is true for many types of pasta, as long as it is not packaged with sauce or other seasonings.

* Buy in bulk. The aforementioned beans are sold by the pound at some stores, so you can buy them without paying for expensive packaging. When other healthy foods with long shelf lives go on sale, stock up on them. By allocating just $10 or so of your food budget each week to bulk purchases, you will eventually have a well-stocked pantry and can spend less on your weekly shopping.

* Stock up on lean meats when they go on sale. Or better yet, buy larger cuts from a butcher and slice it up yourself. When frozen properly, meat can be stored for several months.

* Buy fresh fruits and vegetables as close as possible to their natural state. Instead of buying baby carrots, buy regular ones and peel and cut them. Buy heads of lettuce instead of bags of salad greens. You’ll pay much less by foregoing those little conveniences and preparing things yourself.

* Avoid exotic fruits and vegetables and those that are not in season in your area. Buying things that grow locally might limit your choices slightly, but it can save you money. You’ll also get much fresher produce this way.

* Visit your local farmer’s market. There you can find fruits and veggies at much lower prices than you would in the grocery store. They can afford to sell things cheaper because there’s no fancy packaging, the overhead costs are low and the goods do not have to be transported very far.

* Grow your own fruits, vegetables and herbs. If you have room for a large garden, that’s great. But even if you just grow some herbs and tomatoes in pots, you can save yourself some money.

* Grow extra fruits and veggies (or buy them when they’re cheap) and freeze or can them. Canning involves a learning curve, but the foods you can will last a very long time. Many fresh foods freeze well, and you can keep them in the freezer for up to a year in some cases.

Eating healthy foods doesn’t have to cost a fortune. If you buy the right things at the right time, you can feed your family delicious, nutritious foods for less than you would pay for convenience foods with little to no nutritional value.

Frugal Recipes Using a Basic Baking Mix

Below I have listed several recipes that can be made with a basic baking mix. Once you see how much you can do with this mix, you’ll never spend the money for prepared mixes again.

Biscuits
Preheat oven to 450 degrees F. Combine 1 1/2 cups Master Baking Mix and 1/3 cup milk in a bowl. Add milk and stir. Knead lightly on floured board. Roll 1/2-inch thick; cut and place on ungreased baking sheet. Bake 10 minutes. Makes 8.

Options: Add grated cheese and chopped herbs. Increase milk to 1/2 cup for drop biscuits.

Muffins
Preheat oven to 425 degrees F. Beat together in a bowl 1 egg, 1 cup milk and 2 tablespoons sugar. Add 3 cups Master Baking Mix. Stir just until dry ingredients are moistened. Spoon into greased muffin pans or into paper muffin cups and bake 20 minutes.

Options: Add drained fruit, chopped nuts or dried fruit. Replace 1/3 cup of Master Baking Mix called for with quick-cooking oatmeal or All-Bran(r) cereal. Add chopped dried fruit and nuts to recipe and bake as a fruit bread in a greased 8 x 5-inch loaf pan. Bake 40 minutes at 350 degrees F.

Pancakes or Waffles
Beat together 1 cup milk and 1 egg. Stir in 1 1/2 cups Master Baking Mix. Bake on griddle or waffle iron.

Dumplings
Mix 1/3 cup water to 1 cup Master Baking Mix. Drop into hot stock and cook 10 minutes, uncovered, and 10 minutes, covered.

Coffee Cake
Preheat oven to 375 degrees F. Beat together in a bowl 1/3 cup milk and 1 egg. Add 1/4 cup sugar and 2 1/4 cups Master Baking Mix. Stir until well blended, about one minute. Pour into a greased 8-inch square baking pan. Combine 1/2 cup brown sugar, 1/2 teaspoon cinnamon, 3 tablespoons margarine and 1/4 cup chopped nuts and sprinkle over the top. Bake 25 minutes.

5 Frugal Breakfast Ideas

It is the first meal we eat when we get up in the morning. After a long night of sleep, we can’t do without it if we want to get our bodies going. No, I’m not talking about coffee. I’m referring to breakfast. Here are some ideas for breakfast that don’t require a drive-thru window.

1. Have a piece of casserole. It takes time to cook eggs and bacon for breakfast. No one wants to ruin their clothes with the mess it can create. On Sunday night, get breakfast done early. Put together a casserole using your favorite ingredients. Fewer eggs are needed in a casserole than when frying or scrambling them for breakfast each morning. Depending on the size of your family, the casserole may last two to three mornings.

2. Yogurt. Yogurt is a healthy and economical breakfast choice. When you are eating on the run, grab a container of yogurt and some dried or fresh fruit. Cutting up fruit on top of the yogurt adds carbohydrates to fuel you for the morning in addition to the calcium and protein in the yogurt itself.

3. Breakfast shake. This is even quicker and can be ingested while driving without taking your eyes off the road or both hands off the wheel. Put together some frozen fruit favorites, ice cubes, frozen yogurt, and unsweetened juice in a blender. Pour into Styrofoam cups to keep it cold. Everyone can grab a cup on the way out the door. The nutritional effect is about the same as yogurt, but without the spoon.

4. Pigs in a blanket. This is the homemade version. Whip up a batch of pancakes and freeze them in short stacks of three. A package or two of frozen link sausage is needed to create this quick and economical meal idea. Thaw out a stack of pancakes. Heat up three sausages in the microwave. Wrap a pancake around each sausage. Voila! You’ve got an instant pig in a blanket. Eat it as you watch the last of your favorite morning show or as you walk to the bus stop. It can be eaten in the car without too much fuss or mess. For a sweeter taste and less mess, add a little maple syrup or honey to the batter when making the pancakes.

5. Breakfast sandwiches. In the evening, while you are getting things ready for the next day, grill up a few breakfast sandwiches. Choose whatever you like: turkey slices, ham slices, cheese, tomato, bacon, etc. When the sandwich cools, cut it into bite size pieces and put it in a container. In the morning, just grab a container; pop it into the microwave for fifteen or twenty seconds and breakfast is served.

These breakfast ideas are time saving and money-saving too. They make use of items you buy normally and also whatever you have around the house to create delicious fare for a morning rush. No more excuses for skipping breakfast or swinging into the fast food restaurant every morning.
