    Fried Rice

    2 T. chopped onion
    1 can mushrooms, drained
    1/2 C. cooked chicken, ham or pork
    2 T. cooking oil
    4 C. cold cooked rice
    2 T. soy sauce
    1 egg well beaten
    1/8 t. pepper

    Saute onion, mushrooms and meat in oil in a skillet until tender. Add rice and soy sauce. Cook over low heat 5-10 minutes stirring occasionally with a fork. Add egg and pepper. Cook over low heat 5 minutes stirring constantly with a fork. If desired add additional soy sauce.

    Fettuccine With Vegetables

    1 cup sliced carrots
    1 cup sliced zucchini
    1 cup broccoli flowerets
    1 cup green beans, halved
    8 ounces fettuccine
    1 1/3 cups low-fat cottage cheese
    2/3 cup skim milk
    2 teaspoons basil
    1/4 cup chopped parsley

    Steam carrots, zucchini, broccoli, and green beans until tender. Put in a serving bowl to cool. Cook pasta according to package directions, drain and set aside to cool. Using blender or food processor, puree cottage cheese until smooth. Blend in skim milk, basil, and parsley. Combine vegetables and pasta. Pour sauce over cool vegetables and pasta and mix until they are thoroughly coated.

    Potato and Cheese Snowballs

    6 T. (3/4 stick) butter or margarine, divided
    1 pkg. (30 oz) frozen shredded hash brown potatoes thawed
    1 onion, chopped
    1 T. minced garlic
    1 C. shredded Mozzarella
    1/4 t. Italian seasoning
    1 t. salt
    1/4 t. pepper

    In a large nonstick skillet, melt 3 T. butter over medium heat. Add the potatoes, and cook turning frequently 12-15 minutes until browned. Place in a large bowl and set aside. In the same skillet, melt the remaining 3 T. butter then add the onions and garlic. Saute’ the onions and garlic until golden, being careful not to burn. Stir the onions and garlic into the potatoes. Add the remaining ingredients; mix well. Using an ice cream scoop, scoop the potatoes into 12 equal sized scoops, packing tightly, and place the scoops on the baking sheet. Bake 18-20 minutes or until browned and heated through.

    Fresh Strawberry Freeze

    1 large egg white
    1/2 cup powdered sugar
    1 pint very ripe strawberries, cleaned and stems removed
    1/2 tsp vanilla

    Beat egg white until frothy then beat in sugar. Add vanilla extract. Add strawberries and beat at high speed until light and fluffy. Pour into two serving glasses and freeze.

    Sticky Chicken

    1 large package chicken drumsticks
    1 large can of pineapple (crushed or chunk)
    1/2 cup brown sugar
    garlic, salt and pepper to taste.

    Saute the chicken until is 3/4 done. Pour the pineapple, juice and all over the chicken and add the brown sugar. stir and let reduce on low heat. When chicken is done serve over rice.

    Frugal Banana Smoothie Drink

    1 banana, cut in half and frozen
    1 T. cocoa powder
    1/4 t. cinnamon
    2 dates, pitted
    splash of vanilla
    3/4 to 1 c. cold water

    Combine in blender or smoothie maker, blend til smoothe.
